Taster   Dave Broom
Nose: Concentrated. Dry amontillado sherry, toasted almond. Fungal, rancio notes: cheese rind, porcini water. Phenolics have also reduced to their essence: lobster creels, brine. Spent fire.
Palate: Nutty oak with some tinned fruit salad coming through. A slight resinous quality alongside ashes.
Finish: Lightly spiced, slightly bitter.
Comment: The peat drifts in and out like cigar smoke on your skin the morning after.

Taster   Martine Nouet
Nose: Oak has the word with a sherry accent. Damp cellar, earth floor, dark chocolate. Hard to find a peat note.
Palate: Sweet and bitter. Oak dominating. Oxtail broth. Can't find the peat.
Finish: Bittersweet. Lingering. Drying off on spices.
Comment: Old age has completely integrated peat and smoke. Oak overpowers the marine character. A splash of water does not help.
