Taster   Neil Ridley
Nose: Some floral notes, charred wood, alongside wafts of coconut husks, cocoa powder and flat cola. A big sherry influence.
Palate: More cola notes, cinnamon, a touch of roasted root vegetable. With water,Manuka honey, some apricot and blackcurrant jam.
Finish: Woody spices.
Comment: The wood has given this a distinct dryness, but water really helps to unlock its true potential.

Taster   Rob Allanson
Nose: Initially lilac floral hints but then develops. Drinking chocolate, macaroons, woodland fruits, gentle vanilla and shaved oak.
Palate: Similar to opening the oven door when making the Sunday roast. Sweetbatter notes and a touch of beef stock. Woodland fruits as well.
Finish: Meaty, spicy and pretty long.
Comment: Needs a drop of water to open it up.
