Galway eco-distillery Ahascragh has announced New Born, a zero emissions new-make spirit — the first spirit distilled by Ahascragh since the distillery opened its doors last year. With this release, Ahascragh Distillery is “turning Irish whiskey green” ahead of St Patrick’s Day next week.
Founded by Gareth and Michelle McAllister, Ahascragh Distillery uses exclusively renewable energy from wind and solar, combined with heat pump technology, heat recovery, and energy storage systems.
Gareth McAllister, founder and managing director of Ahascragh Distillery, said: “We are thrilled to have reached the point where we have a zero-energy emissions spirit flow coming from the copper stills in our distillery.
“It has been a long journey to get the process right, but this milestone represents our ongoing commitment to sustainability and reinforces our belief that responsible business practices are not just good for the planet but essential for the future of our industry. Ahascragh Distillery looks forward to continuing its sustainability journey, contributing to a more resilient future for the Irish food and drink sector.”
While they worked on the first new make, the team behind Ahascragh released the Family Bond series of sourced whiskies and gin, including UAIS whiskey — into which the New Born spirit will first flow when it reaches maturation.
