The award-winning bartender has worked at well-known bars in London and Edinburgh, including Lyaness, Voodoo Rooms and most recently at world-renowned cocktail bar Satan's Whiskers.
Bourbon brand Maker's Mark hopes that Nicole's creativity and passion for both cocktails and American whiskey will be an asset as it aims to share its brand story with more drinkers. In her new role, Nicole will also be working to support the on-trade during its transition back into operation when Covid-19 lockdown restrictions in the UK ease.
Commenting on her new role, Nicole said: "The most compelling part for me is the genuine story behind Maker's Mark. Each step of the process has its purpose and is there to create the best-tasting Bourbon whiskey. It's much like when bartenders create cocktails; each ingredient and method is well thought out. We don't use the cheapest or quickest methods; we use the best methods to achieve the best taste experience."
