St Patrick's Day is around the corner, and to mark the occasion we've chosen a recipe for an Irish Coffee, to help you raise a toast to St Paddy on Monday 17 March.
This recipe, from the George pub in Fitzrovia, doubles down on the Irish ingredients with the inclusion of a Guinness reduction. Created by bar manager Colin Maher, the Guinness adds a "rich, malty depth" to the cocktail, says the George, which pairs with the pub's choice of Glendalough Double Barrel.
Ingredients:
35ml Glendalough Double Barrel Whiskey (or your choice of Irish whiskey)
70ml filter coffee
15ml Guinness reduction* (or one heaped teaspoon of sugar)
Double cream
Nutmeg
Method:
Pour the whiskey into a glass or mug. Add the Guinness reduction or sugar, pour over the coffee, and stir. Top with cream, poured over the back of the spoon. Finish with grated nutmeg.
*To make the Guinness reduction, simmer a can of Guinness in a saucepan until reduced by a third. Add an equal weight of caster sugar and stir until dissolved.
