Speyside distillery GlenAllachie has unveiled the first expressions in its new limited-release Wood Collection.
The three sherry cask-finished single malts are the first of six set to be released by the distillery over two instalments in 2024. Dubbed the Sherry Series, the whiskies aim to show the unique contribution of each sherry style.
This first trio of whiskies, all bottled at 9 years old, are the Fino Cask Finish, Amontillado Cask Finish, and Oloroso Cask Finish. All were matured initially matured in ex-bourbon barrels before finishing periods in their respective sherry casks.
Fino, the driest sherry style, must be biologically aged for at least two years under a protective yeast layer that prevents oxidation. Amontillado, another drier style, undergoes biological and oxidative ageing to help the sherry develop a richer colour and a more robust flavour profile. Oloroso, the darkest dry sherry style, is subjected to longer oxidative ageing which helps develop its distinct nutty, dried fruit character.
GlenAllachie master distiller and blender Billy Walker said: “This wood management project has been one of the most enjoyable in a long time. We’re exploring the influence of different sherry cask types with whisky of exactly the same age and cask history. The lengthy secondary ageing period brings the incredible nuances and variations delivered by the sherry maturations to the forefront.
“With the Sherry Series, we’re trying to achieve something special that would create intrigue and provoke discussion. Integrating the personality of six sherry styles with the GlenAllachie’s heather honey DNA delivered a spectrum of aromatic and flavour characteristics that has exceeded our expectations. The first three expressions are truly exceptional — we can’t wait to share part two in a few months.”
The Fino Cask Finish, Amontillado Cask Finish, and Oloroso Cask Finish are all bottled at 48% ABV without added colour or chill filtration. They will be available through specialist retailers worldwide, with a recommended sale price of £60.
The new series follows the launch of a refreshed brand identity and bottle design for GlenAlllachie, which was unveiled in February.
