The Holyrood x Pilot White Stout Recipe New Make Spirit (named Best Scottish New Make at the 2023 World Whiskies Awards) has been designed by the Edinburgh distillery to mirror the recipe and profile of Pilot Beer's White Stout. Since opening in 2019, Holyrood has been experimenting with speciality malts and yeast varieties in the production of its spirits. It expects to release its inaugural single malt whisky later in 2023, and launched the Height of Arrows gin range in 2021.
Matt Johnson, founder of Pilot, described the new make as "roasty and malty in character", adding: "A spectrum of speciality malts really layer up those delightfully sweet, toasted flavours."
Taking place this year from 2–4 June, the Mash Up is a beer and whisky festival held at Holyrood Distillery which offers ticket holders the chance to meet a range of exhibiting distillers and craft brewers, plus access to whisky and beer tastings and expert masterclasses. Exhibitors confirmed for 2023 include Annandale Distillery, Woven Whisky, Otherworld Brewing, Vault City Brewing, Finnish distiller Kyrö, Sweden's High Coast Whisky, and the Oxford Artisan Distillery, as well as Holyrood and Pilot.
As well as exclusive pours of the Holyrood x Pilot White Stout Recipe New Make Spirit, guests at the Mash Up will also be able to try the Pilot x Charmed Circle Lager. This previous collaboration between the two companies was based around Holyrood's Charmed Circle, an aged spirit drink produced with heritage barleys.

Holyrood x Pilot White Stout Recipe New Make Spirit will be priced at £34.99 and will be available exclusively at Holyrood Distillery.
