Hyde becomes first whiskey ever finished in Greek wine casks

The release is a collaboration between Ireland’s Hibernia Distillers and Greece’s Dalamara Winery

01 March 2022

Allegedly the first ever whisk(e)y finished in Greek wine casks, Hyde Dalamara Single Cask (50% ABV) is a collaboration between the Cork-based makers of Hyde whiskey, Hibernia Distillers, and Dalamara Winery of Naousa, Greece.

To create this unusual crossover, the triple-distilled Irish single malt was matured for eight years in a first-fill oloroso sherry cask before being finished for six months in a Xinomavro wine cask. Xinomavro is the principal red wine grape of the uplands in Naousa, Macedonia.

A limited edition bottled for Oenocosmos Ltd, just 366 bottles are available from the company’s wine and spirits shop, Kylix. Bottled at natural colour and without chill filtration, the expression is limited to two bottles per customer (RRP €85).
