Irish Distillers’ micro distillery has released Method and Madness Amburana Wood Edition, a single pot still Irish whiskey aged in amburana wood casks.
The micro distillery and Method and Madness brand have been a stage of experimentation for Irish Distillers since it opened in 2017, as the new cask finish exemplifies. Amburana wood is usually used for Brazilian spirit cachaça.
The Amburana Wood Edition was distilled in 2018 from malted and unmalted barley. It was first matured in ex-American whiskey oak casks before a four-to-seven-month finish in amburana wood.
Barrett Stapleton, head distillery at the micro distillery, said: “We’re delighted to launch Method and Madness Amburana Wood Edition, an exciting expression crafted at the micro distillery in Midleton. Having trialled a variety of wood finishes, the team felt it was the optimum time to showcase the unique and interesting flavour profile of amburana wood. This expression pushes the boundaries by using innovative wood, unlocking new flavours and yielding a truly distinctive character in the resulting whiskey.”
Irish Distillers says the cask finish gives the whiskey additional flavours of marzipan, cardamom, and vanilla which join clove, cinnamon, honey, and hazelnut syrup in the flavour profile.
Method and Madness Amburana Wood Finish (46% ABV, RRP €95) is available now in the Republic of Ireland, Northern Ireland, Irish Distillers’ brand homes, global travel retail. It will be released to the United States in 2025.
