The 'Aromatic Yeast' single malt whiskies from Yoichi and Miyagikyo are designed to showcase the power of yeast and fermentation in the distilleries' whisky-making processes. The whiskies were first released in France and the US in October 2022, but are now being made available to UK whisky drinkers.
The new expressions were created through experimentation with different yeasts to achieve particular aromas and flavours. Nikka says the Yoichi release has a "floral and fruit-driven character" from its low-temperature fermentation, while the "deeply malty" Miyagikyo expression was fermented with yeasts that encourage the development of fruity flavours.
Only 20,000 bottles of each whisky have been released worldwide.
The Nikka Discovery Series was launched in September 2021 with two limited-edition expressions that focused on the diversity of ingredients available to the company's distillers: Yoichi Non‐Peated Single Malt and Miyagikyo Peated Single Malt.
Yoichi Single Malt Discovery Aromatic Yeast (48% ABV) and Miyagikyo Single Malt Discovery Aromatic Yeast (47% ABV) will be available at selected specialist retailers from February 2023 with a recommended price of £245 per 700ml bottle. The new whiskies will be distributed exclusively by Speciality Brands.
