The releases of limited edition expressions Filey Bay Port Finish Batch #1 and Filey Bay Sherry Cask Reserve #3 will mark the distillery’s final releases before Christmas this year.
The former expression spent its first maturation in ex-Bourbon casks filled in 2017, before being re-racked into ex-Ruby Port casks in late 2020 for a second maturation. Only 3,300 bottles will be made available.
Bottled at 46%, Finish Batch #1 is available at a price of £65 per 70cl bottle. The producer has described the liquid as having notes of blackberry jam, dark chocolate and vanilla on the palate.
Speaking on this expression, the distillery’s whisky director Joe Clark commented: "Ruby Port casks can be hard to source but give the spirit a fresher and fruitier character than the heavier, richer, better-known Tawny Port casks. The jammy, fruity nature of Ruby Port really complements our whisky. I particularly like how the vanilla and toffee notes from the ex-bourbon work with the light spices and sweet fruits from the port wood in this release. Whisky is a game of patience, and this release proves it. It's been a long time coming but definitely worth waiting for.”
The Sherry Cask Reserve #3, meanwhile, is the third of the distillery’s annual autumn sherry cask reserve series. It’s the marriage of five ex-Fino casks, with three casks filled with the distillery’s heavier pot distillate, while the other two held lighter, fruitier column distillate.
Bottled at 46%, the producer has described the expression as having notes of ginger cake, boiled sweets, honeycomb and cinder toffee on the palate. With only 2,000 bottles available, there is a limit of two per person at an RRP of £75 for 70cl.
Both expressions are available to purchase from Spirit of Yorkshire’s website, as well as the distillery shop and various nationwide specialist retailers.
