The Dalmore has updated its Cask Curation Series with a set of three new expressions which make up its Port Edition. The whiskies are a product of the Dalmore’s decade-long collaboration with Symington Family Estates, the makers of Graham’s Port.
Under the partnership, port casks pass from the hands of Symington’s winemakers to the Dalmore’s whisky makers, to finish the distillery’s single malt Scotch whisky.
Within the three-part Port Edition, the Dalmore has released a 27 Years Old finished in Graham’s 1997 Single Harvest Tawny Port casks, a 30 Years Old finished in Graham’s 1994 Single Harvest Tawny Port casks, and 43 Years Old finished in Graham’s 1952 Single Harvest Tawny Port casks.
All three expressions are non-chill filtered and released with their natural colour. The Dalmore says that the casks offer the whisky flavours of rich fruits and dark chocolate.
To make Graham’s Port, grapes are hand-harvested from Quinta dos Malvedos, Graham’s principal estate in Douro, Portugal. The wines are taken to Graham’s 1890 Lodge in Vila Nova de Gaia, near Porto, where master blender Charles Symington selects those suitable for long-term ageing. The wine casks are held at the Lodge, where the Dalmore has visited over the past years to select port pipes to best suit its whisky making.
Margaret Nicol, blend controller for the Dalmore, said: “Graham’s really is special, as a peaceful place to meet the casks, and listen to them and their story. Plus, it is a unique place to enjoy the Dalmore, overlooking the river and the city. The collection is a celebration not only of partnership, but of the friendship between us at the Dalmore and the Symington family.”
Cask selection is crucial to the Dalmore’s whisky-making approach and is the key subject of its Cask Curation Series. The previous release in the series, Sherry Edition, showcased the sherry casks of the distillery’s exclusive supplier, Jerez-based bodega González Byass.
The third and fourth releases in the collection are due to be revealed in 2025 and 206 respectively. Each release will explore a different winemaker with whom the Dalmore has a relationship.
The Dalmore Cask Curation Port Edition is priced at £35,000 for the three-bottle collection. Just 150 sets will be released worldwide on 1 October. For more information, visit thedalmore.com.
