Copperworks Distilling Co. releases first salmon-safe whiskey

Release 039 is the first American single malt made with salmon-safe ingredients

Copperworks’ Release 039 is produced in partnership with Salmon-Safe, a leading North American ecolabel with more than 95,000 acres of farm and urban lands certified in Oregon, Washington, California and British Columbia, helping to protect wildlife in rivers and watersheds.

The distillery says this whisky exhibits aromas of rich, stewed fruit and pipe tobacco, flavours of candied citrus peel and cedar, and a long finish of mango and slightly briny notes.

For this release, Copperworks has also worked with Washington-based Mainstem Malt, a conservation-focused malt supplier who provided the Washington-sourced single-variety Genie barley for this whiskey. It was grown by HT Rea Farming of Walla Walla and malted by LINC Malt of Spokane. The whiskey was matured in charred new American oak casks for 36 months.

“We love supporting farmers that help protect our watersheds,” said Copperworks Distilling Co. co-founder and president Jason Parker. “And, as it turns out, the varietal from this farm has produced some beautiful whiskey. We’re tasting flavors that reflect cedar and fruity red wine, which are dramatically different from other grains that we use. We’re really excited to release this whiskey, and in turn, support farmers that are protecting our planet.”

Copperworks Release 039 is available at select Washington retailers, bars and restaurants, and can be purchased online or at the Seattle distillery.
