Tasting notes
Taster   Dave Broom
Nose: Gentle, but obvious perfumed smoke, burning cedar/cypress mixing with a smooth, gentle crème brûlée quality along with a hint of wax suggestive ofage. As it opens a whiff of crispy bacon sandwich, right down to the meltingbutter, red pepper flakes.
Palate: Smoke again, but still in balance. Embers of a wood fire mixed with soft fruits, strawberry, mango and apricot.
Finish: Long, fruity.
Comment: A long, complex and harmonious run of flavour. Excellent.

Taster   Martine Nouet
Nose: Peaty. Touch of creosote. Animal farm. A fresh minty note intertwined with cereal. With water, ripe fruit. Grapes and plums.
Palate: Smoky, much more than on the nose. Kiln smoke with a sweet core.
Finish: Dry, smoky, slowly fading with a slight spicy note.
Comment: Water enhances the sweetness. A balanced peaty character with a pleasant sweetness challenged by smoke.
