Tasting notes
Taster   Dave Broom
Nose: Smooth and soft to begin, then some light smoke, bourbon biscuit, roast beef gravy, mint all balanced by gentle vanilla ice cream.
Palate: Praline, butter/cream. Meaty and rich in the centre with gentle oak. Substantial with richness.
Finish: Sweet then smoky/burnt.
Comment: This is still improving. A couple more years in cask would have improved it further.

Taster   Martine Nouet
Nose: Tangy, somewhat spirity. Cider cellar. Wet leaves. Touch of earthy mushrooms. Pear drop. Becomes cheesy.
Palate: Biting. Sour apple, pear drop. The cheesy notes show up.
Finish: Fizzy, spicy and nutty. Turning bitter.
Comment: Nose and palate are a bit agressive with a lingering sourness which is disturbing. A prickly character. Water smooths the flavours over but this is not enough.
