Tasting notes
Taster   Joel Harrison
Nose: Sweet and sour sauce, pineapple and red apple. Waxy and oily with great body to it. Honey and lavender. Really very complex and juicy.
Palate: Juicy Fruit chewing gum, tropical fruits and fresh coconut flesh. Underneath the fresh tones there is a hint of a clove and white chocolate. Some tonka bean, which adds body.
Finish: More runny honey and pineapple juice, and then a big hit of watermelon, all of which leave you wanting more.
Comment: A really fantastic, fruity dram which reminds me of the first time I tried Jolly Rancher sweets. Great balance, great flavours.

Taster   Chris Goodrum
Nose: Quite soapy and oily with rye-like herbal sherry and intense, gritty tannins. The richness of the malt balances the dryness of the cask well though.
Palate: Quite sweet and herbal with plenty of clean, softer, slightly toffeed sherry oak. Full but relatively straightforward.
Finish: A little dry and tannic with lingering spices and hints of chocolate and coffee.
Comment: I can’t say I’m getting much Highland character here, but as sherry monsters go, it’s ok.
