Tasting notes
Taster   Dave Broom
Nose: Intense, ozone-like and hot (though not unpleasantly so). Sashimi, yuzu andsamphire. Freshens further with water where a grassiness emerges alongwith peat smoke.
Palate: Immediate smoke. Oily with the fullest expression of the intensity seen on the nose. Crab shells, citrus zest, wasabi, brine. Bracing and salty with light pine.
Finish: Embers.
Comment: I prefer this neat, but whatever your preference, this is an exceptionalCaol Ila.
Taster   Martine Nouet
Nose: Light, earthy, grassy. Lemon grass, wet leaves. Dried apples. A hint of fennel. Restrained at first then releasing a fragrant bouquet of dried flowers and fruit. With water, a touch of creosote.
Palate: Smooth, velvety. Quite thick and oily on the tongue. Sherbety. Sweetmaltiness. A hint of smoke.
Finish: Dry, spicy, fizzy. Aniseed losange.
Comment: An interesting multilayered dram. The peat character does not show muchbut 'seasons'
