Tasting notes
Taster   Chris Goodrum
Nose: Wonderfully fragrant and honeyed; a serious mature honey fest. Sweet-ish barley, hints of coffee, earth and light, granity notes.
Palate: Unctuous and mouth-coating honey and plenty of it too! Hints of citrus, earth and minerals emerge. It’s not overly complex but it is stunningly deep.
Finish: Long and honeyed (surprise!) with alcohol freshening the finish but the honey hangs on in there.
Comment: You could argue that it’s a bit simple but when it delivers simple like this, who needs complexity?

Taster   Sara Smith
Nose: Well-integrated nose, with notes of sweet raisin, cranberry, caramel, and a little red vermouth and chocolate.
Palate: It starts out smooth and creamy, before a burst of heat, followed by rich, indulgent notes of pancakes with maple syrup. Flavour is interrupted by very genuine, dark wood notes and rich fruit.
Finish: Straightforward, but warm, lovely balance. Sweetened wood and unsweetened popcorn.
Comment: This has strong, recognisable flavours (in particular the maple syrup and pancakes), but very well put together. Enjoyable.
