Tasting notes
Taster   Neil Ridley
Nose: Very intriguing. Soft peat, a touch of camphor, beeswax and rain soaked soil. Beautiful balance and complexity. With water, a little milk chocolate, some floral soap and orange blossom joins the party. Sensational.
Palate: Wonderfully integrated peat, soft fruits, Manuka honey a waxy undertone, drying oak and slight rancio notes.
Finish: Wonderfully integrated peat, soft fruits, Manuka honey a waxy undertone, drying oak and rancio notes.
Comment: Absolutely triumphant - A bee keepers delight.

Taster   Rob Allanson
Nose: An old leather armchair, boot polish, damp turned earth. A little scented soap, accacia honey. A sweet peat note. Oiled paper used to wrap chocolate. A little grain, sweet barley sugar cordial.
Palate: Waxed mango skins, gentle peat, apple boxes. A lovely herbal edge, honey roast almonds and cane sugar.
Finish: Cinder toffee sweetness with oak spices coming through.
Comment: Such poise and grace.
