Tasting notes
Taster   Dave Broom
Nose: Rounded with some rancio - field mushroom. Lightly leathery and supple. Heavily oxidised and slightly feral. Reminiscent of an old manzanilla pasada. Candle wax in a Gothic house.
Palate: Surprising fruitiness comes through, all blue and black fruits then scented woods. Dense but still has energy. Clean, honeyed rich and layered.
Finish: Liquorice.
Comment: A rich and mysterious dram.

Taster   Martine Nouet
Nose: Malty. Farm-like. A cowshed, with a mix of animal scents and straw. Animal feed too (pallets). Grassy. Opening on treacle and fig syrup. Intense
Palate: Crisp. Taffeta like. Treacle and dried fruit but without the sugary flavours. Old cider. Getting spicier. Water enhances some oaky grip.
Finish: Quite long, dry and spicy.
Comment: The nose and palate are very different. Slighty dour on the palate. A firm character though.
