Tasting notes
Taster   Chris Goodrum
Nose: Pungent and medicinal with sweet barley and acacia honey. Fresh pine needles, white fruit, subtle salt and dusty peat smoke emerges with time.
Palate: Sweet barley, white fruit and creamy/milky oak. Sweet peat, loam and coffee notes. Darkens as the malt arrives and dries as the rock salt notes kick in.
Finish: Long and salty with lingering iodine enhanced, crisp white fruit along with that pine needle freshness.
Comment: A lovely Islay. Not overblown peat wise, just very well balanced and seriously salty!

Taster   Joel Harrison
Nose: An old church hall newly cleaned with lemon scented cleaner, while a peat fire burns in the field behind. Sweet smoke.
Palate: Chamois leather and smoke. Pear drops and poached pear. Think smoked elderflower and you’ll not be far wrong, this is sweet peat in glass.
Finish: Sweet, with white flowers and honey, and a big dollop of smoke.
Comment: Yes, this is fine whisky making, with a liquid designed to be drunk.
