Tasting notes
Taster   Chris Goodrum
Nose: Fresh and honeyed with a light mentholated herbal note. Fruity with hints of apricot and pineapple; a light coastal note and just a sliver of peat smoke.
Palate: Heavier on the honey with coffee, gritty tannins and burnt wood embers. Dense fruit gives the palate a good depth. The saltiness builds well on the middle and a distant peat note can be detected.
Finish: Long and lightly oiled with violet and lingering wood spices. A dry, salty after-taste.
Comment: Very harmonious. The dense, fruitiness of the spirit gives it weight and it’s not one dimensional.
8.2
Taster   Martine Nouet
Nose: Phenolic. Smoky. Briny. Smoked fish. A sweet note in the back. Touch of nail varnish. Lemon drop. With water, creosote.
Palate: Silky. Sweet and smoky. Kippers (but not the salty ones). Fresh garden mint.
Finish: Gently soothing on a liquorice note. Smoked almond.
Comment: Probably matured in second fill bourbon casks. Not complex but refreshing.
