Tasting notes
Taster   Becky Paskin
Nose: Initially heavily meaty and punchy with aromas of gammon, sweaty cheese and new leather brogues. There’s a subtly sweet but dusty rancio quality that hints at old PX sherry.
Palate: Noticeably sweeter than the nose as the sherry influence makes itself known with rich fruitcake, marzipan and candied ginger. Waxy and complex, the flavours only build as the oak spice leads them in a waltz across the tongue.
Finish: A return to the leather with a helping of Christmas cake.
Comment: Incredibly indulgent and satisfying.

Taster   Rob Allanson
Nose: Big floral notes, like watering cottage gardens in the summer; honeysuckle and white roses, a touch of lavender. Plenty of honey. Mown grass.
Palate: Rich and sweet, lots of leather, old bound books, strawberry laces and cinnamon spices. Hints of liquorice and herb-laden salt.
Finish: Just keeps on going and going. It moves from sweetness to a little spice and then to that liquorice.
Comment: Clearly something special going on here. Lovely interplay between the wood and spirit, underpinned with great sweetness.
