Tasting notes

Taster Phoebe Calver

Nose: Unmalted grain, warming rye bread, pickled onion, rubber gym floor, sage and onion stuffing, aniseed balls, liquorice sweets, and peppermint tea.
Palate: Oily mouthfeel, that menthol note warms things. Very herbal and dry with notes of lavender honey, sage and fermenting yeast. Pistachio, Turkish delight with marzipan. It’s sweet with ripe bright peach. Rose petal and white pepper.
Finish: Pistachio, rye bread and creamy sage on a medium, dry finish with earthiness.
Comment: It’s odd but complex, with delicacy.

Taster Christopher Coates

Nose: Wonderfully herbal: sage, eucalyptus, and tarragon. There’s vanilla and a whiff of lavender and rose water. Beneath it all is a foundation of rye bread, dusty hayloft, white pepper spice and green bell pepper.
Palate: At first, it’s all sourdough bread and delicate pepperiness, then comes green apple, vanilla custard, orange boiled sweets, and mascarpone.
Finish: Medium-short and just a tiny bit mushroomy, with pistachio and rose.
Comment: Completely left of field but really very tasty.
