Tasting notes
Taster   Rob Allanson
Nose: A wonderful waxy applewood smoked cheese note straight off, with the fatty sweetness of smoked pork loin. There’s fruit too here, mango skins and blood orange come through.
Palate: The fruit sweetness dominates first, blackcurrant jam and toasted crumpets. Dark chocolate chip cookie dough. Slowly smoke starts to spread.
Finish: Everything continues to dry with the smoke taking hold.
Comment: Wonderful movement here from the sweetness to drying smoke. Reminds me of a leaf-laden bonfire.

Taster   Becky Paskin
Nose: Smoky and headily fruity with grilled figs, marmalade, strawberry and raspberry jam, with a meaty, smoked ham quality as well.
Palate: The meatiness shines through with marmalade-glazed ham topped with sliced preserved lemons. Baking spices, black pepper and stewed bramble fruits dominate the mid-palate, that soft, drying smoke fusing everything together.
Finish: Dry, meaty and delicately smoky.
Comment: Big, bold and satisfying.
