Tasting notes
Taster   Christopher Coates
Nose: Smoky bacon crisps, Chinese fried pork with fruity barbeque sauce, fresh strawberry and sweet balsamic. Candied orange and honeycomb. Honey-roasted peanuts with paprika. Vanilla and subtle cream coffee.
Palate: Smoked fruits and nuts: apricot, red apple and cashew. Candied ginger and orange. Smoked nuts. Quince jelly and maple syrup on crispy bacon.
Finish: Long. Fades on smoked streaky bacon, cashew and sweet red apple with tannins.
Comment: Rather savoury. Very delicious.

Taster   Phoebe Calver
Nose: Waxy oiled cloth, sweet smokiness almost verging on smoked salmon. Earthy old damp wood, pencil eraser, raisins and suntan oil.
Palate: Sweet and juicy sultanas, before the earthy-sweet smoked wood notes arrive. Mossiness follows. Hazelnut chunks in a dark chocolate fruit and nut bar, waxy suntan oil. Ginger warmth.
Finish: Medium to long with an earthy smoke and chocolate note.
Comment: Complex and the perfect balance between sweet, rich and earthy. I’m a fan.
