Tasting notes
Taster   Christopher Coates
Nose: Intense red apple, almost Calvados-like, and dark chocolate truffle. Golden syrup, clove and soy sauce. Cinnamon and cocoa-dusted almonds. Prunes in syrup. A suggestion of wood smoke.
Palate: Medium-full bodied. Honeycomb and strawberry gummies, peanut and more cocoa. Medjool dates and nougat. There’s a slight meatiness to this, too.
Finish: Roasted chestnuts, tart apple and cocoa linger long.
Comment: This is one of those sherry casks that’s hit the perfect balance of sweet, tart and savoury.

Taster   Phoebe Calver
Nose: Stewed red apples, rich prune juice, Wood’s Rum, creamy fruit and nut bar, crème caramel and clove spice. It’s yummy.
Palate: Very savoury, chestnut, flakes of parmesan and more clove spice. Then sweet madeira cake, sage and a chocolate tang.
Finish: Warming and medium length, rounds out with meaty chestnut and stewed apple.
Comment: Love the sweet and savoury element; this is a delight for the senses.
