Tasting notes
Taster   Chris Goodrum
Nose: Dense and thick, fleshy fruit and lightly sawdusty oak. The oak powers through with clotted cream and toffee, but the grapefruit counters. Pepper, spicy liquorice and a touch of honey come through.
Palate: Fresher and displaying more barley and crisp citrus notes. The oak sits pliantly in the background. Lovely peppery and spicy middle with the oils balancing the citrus.
Finish: Good length. The citrus and alcohol make it dry but a light herbal honey note lingers.
Comment: The nose initially feels a little lumpen but give it some time and aeration.

Taster   Sara Smith
Nose: Bright wood, young leaves, and straw. A bit acidic, but sweet, like homemade jam. Creamy notes after a while, toffee, hazelnut, and coconut at the very end.
Palate: Quite warm at the outset, with a peppery texture, followed by textbook mellow, fresh wood, highlighted by light custard notes and a hint of Brazil nut.
Finish: Oak, vanilla, butter, and a continuation of the jammy notes from the nose. At the very end, this develops into bitter, ash wood with a herbal edge.
Comment: A straightforward, savoury whisky, focused around fresh wood notes.
