Tasting notes

Taster Phoebe Calver

Nose: Demerara sugar sprinkled on top of an Eccles cake, hot greenhouse with green tomatoes, permanent marker pen and cedar wood, too.
Palate: Black forest gateaux vibes, with all that dark fruit and dark chocolate shavings. Old school toffee syrup and ginger balls in syrup, then more cedar wood.
Finish: Medium to long drying finish, leaning towards spiced almond croissant paste.
Comment: Interesting and balanced, and I would really like to try this in an Old Fashioned (sorry to offend cocktail traditionalists there).

Taster Christopher Coates

Nose: ight and nose-tingly. There’s peach and lemon, but water is needed for more. Some aloe, fromage frais and honeycomb notes emerge with coaxing. Perhaps even banana fritter.
Palate: Sweet orange segments (pith on) and blossom honey, with time comes a little mango puree and lemon drizzle cake. Roasted almond flake and orange wine.
Finish: Medium, hot and sweet. Golden syrup and nectarine segments.
Comment: Some lovely flavours but almost too hot to handle. Water needed.
