Tasting notes
Taster   Christopher Coates
Nose: Crumbly Wensleydale, honeycomb and fresh figs. Spearmint leaf, subtle aloe, and fresh leather. Some delicate pipe tobacco and sultana, with coconut shavings and blanched almonds. In time, smoky bacon crisps.
Palate: Medium-full. Mouth-coating tobacco and delicately medicinal notes, with Greek yoghurt, green apple slices and tinned mandarin segments. Sweet and sour sauce with charred pork ribs. Delicately smoked cashews.
Finish: Long. The medicinal note lingers.
Comment: Complex and well balanced.

Taster   Phoebe Calver
Nose: Melting butter, fresh cream and tinned peaches. Then its shortbread, wild flowers, coconut milk and toasted brioche, with just a delicate whisper of smoke.
Palate: Glorious sweet smoke, hints of tobacco, more of the coconut milk and syrupy peaches. There’s some prickly ginger heat peeking through.
Finish: The smoke becomes fruit and nut bar.
Comment: Not only do I love this, but it’s also really well executed – a touch hot maybe, but to be honest I don’t really care.
