Tasting notes
Taster   Chris Goodrum
Nose: Unyielding, treacly, sherry, burnt wood, molasses, seaweed, smoke and iodine. Peat drifts in with dark violets, stewed coffee, praline and dried fruit. That sherry is so thick you can cut it with a knife!
Palate: Dry, opening with coffeed Oloroso, burnt wood and bonfire embers. Tannic and woody, balanced by treacle and molasses. Hints of dusty spice and violets, sweet peat notes.
Finish: Good length. Peat notes gain momentum and the burnt wood, treacle, smoky tannins and herbal notes linger.
Comment: Comments: Wow! Talk about a finish. I could still taste this the next day.

Taster   Martine Nouet
Nose: Heavily sherried. Damp wood, moss, humus. Walnut stain. Damson plums and sultanas.
Palate: Crisp, tannic. Bittersweet. Lots of sweet liquorice root. Oak is very present, as expected. But not overly astringent. There is a good balance with the sweet notes of sherry wood. The alcohol is completely mastered.
Finish: Sweet, with a slight astringency. Liquorice again and again.
Comment: A classic sherry matured whisky. Probably aged. Don't spoil it with water as makes it astringent. It does not need it anyway.
