Tasting notes

Taster Christopher Coates

Nose: Fermenting tropical fruits. Rum raisin ice gelato with almond flakes in a brioche bun. Passionfruit and stewed physalis cheesecake.
Palate: Passionfruit iced tea with honey, subtle jasmine, and golden syrup. Apricot jam-filled croissant and pain au chocolat, slightly burned. Fancy custard over baked peach tart.
Finish: Medium-long.
Comment: A gourmand’s dream tour of a tropical bakery.

Taster Phoebe Calver

Nose: Cream cheese hits first, then a hint of marzipan and vanilla oats. Elderflower enters and bright orchard fruits, followed by cinnamon and furniture polish.
Palate: Dried old pine, with just a hint of sweet smoke on a s’more. Heather honey and elderflower liqueur, with a hint of sage. Nutmeg and hazelnut chocolate.
Finish: Fresh and lingering, moving from peppermint to more hazelnut chocolate.
Comment: This is just lovely and unique, with a beautiful balance and character.
