Tasting notes

Taster Christopher Coates

Nose: Delicate blueberry and raspberry fromage frais, kiwi, strawberry laces and mixed fruit wine gums. Beneath there’s gingerbread, cedar, nutmeg and brown sugar.
Palate: Full. Concentrated blackberry and raspberry compote flavours, with chocolate brownie, flapjack and floury roll. Dried pineapple, creamy yoghurt, maple candy and apple cordial. Some delicate ginger and subtle cayenne pepper, too.
Finish: Long. Pickled sweet red pepper fades to resin and apricot.
Comment: A breakfast fruit bowl.

Taster Phoebe Calver

Nose: Like Christmas pudding, with baking spices cutting through, raisins, dates, walnuts and candied peel. Then a hint of toffee sauce and single cream.
Palate: Things get a little more tangy, with grated orange peel, followed by more toffee sauce over a sponge with chunks of date and stem ginger in it.
Finish: Lingering spicy hits of ginger, which are mellowed out a touch by the sweet toffee.
Comment: It’s punchy and flavoursome, with lovely balance and character. I think this could be fun as a simple whisky and ginger.
