Tasting notes

Taster Phoebe Calver

Nose: Lovely interplay between bonfire smoke and grain, with malted milk biscuits and citrus zest. Grapefruit slices, sea mist and orris root.
Palate: The smoke notes have become more like a barbeque with salty pork chops and pineapple on skewers. There’s some sweetness with green apple skins, brown sugar, toasted cinnamon and a touch of dark chocolate.
Finish: Sea mist, with smoked notes and a lingering hint of cinnamon spice.
Comment: Sweet and salty. The smoked notes really wrap this up perfectly.

Taster Christopher Coates

Nose: Eucalyptus, aloe, menthol, capsicum and subtle juniper berry. Under it all is olive brine, nutty and oxidised sweet vermouth and shortbread biscuit. Pear drop, white grape and cucumber.
Palate: Medium-light body. Delicately medicinal (iodine), with Kalamata olive and herbal notes of oregano and thyme. Burnt sourdough, subtle celery, under-ripe pear and cigarette smoke, too.
Finish: Short. Evaporates on the tongue, leaving a menthol cigarette note.
Comment: As bracing as the Islay wind and just as invigorating.
