Tasting notes

Taster Phoebe Calver

Nose: Like standing by the sea on a windy day, with slight salinity and a brioche bread and butter pudding studded with raisins and chocolate chips.
Palate: Lovely balance of spices, with smooth nutmeg and cinnamon, followed by toasted honey nut cereal notes and more of that saltiness – like salted dark chocolate.
Finish: Dark fruits return, with raisins and more of that salted chocolate lingering.
Comment: I’d really like to test this out in an Old Fashioned with some chocolate bitters as I think it could play well there.

Taster Christopher Coates

Nose: Toffee, chocolate fudge cake, coffee creams, and butterscotch. Pancakes with golden syrup, real wax honeycomb and bruised strawberries.
Palate: Full and mouthcoating. Black forest gateau: black cherry, dark chocolate, cream, kirsch and sponge. Then comes lemon drizzle cake, zingy and sweet. A nuttiness builds, akin to peanut brittle. Then sultanas and fruit cake with marzipan icing.
Finish: Long, the nuttiness shows a hint of mushroom before receding on chocolate-dipped blackcurrants.
Comment: All the flavours of scrumping.
