Tasting notes
Taster   Phoebe Calver
Nose: Lovely coffee and walnut cake, with a sweet frosting. Then the richness of cedar wood and chunky raisins.
Palate: Things soften up here, with more of the raisin fruit, followed by honey on a slice of heavily toasted sourdough bread.
Finish: A nicely lingering finish, with heather honey and sweet smoke weaving through.
Comment: A really enjoyable development from the darker notes, through to the herbal light notes – beautiful balance.

Taster   Christopher Coates
Nose: Honey water and vanilla essence, backed by subtle daffodil and jasmine tea notes. Elderberry wine and gooseberry jam. Green apple with Greek yoghurt. Wensleydale cheese with apricot pieces.
Palate: Subtle sweet ricotta and candied lemon, then intense marmalade and honey-dipped red apple notes. Apple, peach and raspberry juice-flavoured water.
Finish: Medium, on blossom honey.
Comment: A real summer fruit cup.
