Tasting notes
Taster   Phoebe Calver
Nose: A truly beautiful nose full of dark fruits, fresh figs with mascarpone, almond tart, a slight hint of saltiness, almost salted caramel too, then gentle warming sweet spice.
Palate: It gets a lot fruitier here, with some tropical notes of dried papaya, then the cherry on top of a Bakewell tart, more oak spice, and red berry compote.
Finish: The fruit mellows to pomegranate, with almond flakes sprinkled around.
Comment: I feel lucky to have tasted this. It’s the perfect combination of sweet and salty and I wish I had some more.

Taster   Christopher Coates
Nose: Herbal (sage, thyme and heather) and slightly earthy, with fermenting apples, tomato stem and peppermint leaf. Graphite, paints and modelling putty. Leather, paprika and a whiff of subtle cigar smoke.
Palate: Medium bodied. Liquorice, red grape juice and cinder toffee. A herbal structure, mirroring the nose. Roasted chestnut, subtle oyster mushroom, and black treacle. Muscovado sugar, anise and white miso.
Finish: Medium length, with sage and tobacco.
Comment: A venerable, concentrated, old dram.
