Tasting notes
Taster   Christopher Coates
Nose: Engine oil, petrol, Vaseline, menthol, leather, tamarind, ink and fresh paper. Pencil shavings, slate dust, and rubber gloves. Herbal dill and white sage. With time, peach, pear and cream cheese.
Palate: Medium to light bodied. Pear drop, celery, and a touch of balloon rubber. Simple sugar syrup. Candied orange, lemon and ginger pieces. Cinnamon-dusted pastry twists. Coffee creams.
Finish: Medium, on vanilla latte and balloon rubber.
Comment: Equal parts kitchen garden, machine shop and art studio. Immensely nuanced, complex and drinkable.

Taster   Bethany Whymark
Nose: Creamy and smoky, like a burnt cheesecake. Woody rosemary. Barbequed pork and nectarine slices. Grapefruit peel. A little wood varnish. Sweet brioche dough and chocolate-hazelnut spread.
Palate: Medium. Charred sage and rosemary with more barbequed pork. Hazelnut latte and gianduja. Poached pears with spiced syrup (cinnamon, clove, orange peel, vanilla), and clotted-cream ice cream.
Finish: Medium-long, on toasted hazelnuts, mint stalks, and sweet smoke.
Comment: Luscious texture and delightful, well-balanced flavours.
