Tasting notes
Taster   Rob Allanson
Nose: Apples, pears and honey. Hints of gorse flowers, which move to a more musky floral tone. Pickled walnuts emerge, dark chocolate.
Palate: Sweet but then turns musky again, leather-bound books and roasted hazelnuts. There is a hay-bale note here, whipped goats cheese and honey.
Finish: Doesn’t hang about. It dries swiftly, leaving that goats’ cheese and honey edge.
Comment: Takes you through a whole raft of flavours and aromas as you move from nose to palate.
8.1
Taster   Lyndsey Gray
Nose: Peaches, apricots and raisins covering a warm bread and butter pudding. Dark chocolate covered coffee beans, almond flakes and crushed pistachio shells start to overpower the rich fruits.
Palate: Stewed fruits and sour plums, bitter coffee and damp leather overpowers the juicy fruits that appeared on the nose. Cream of mushroom soup and hints of parmesan.
Finish: A short finish with a very sour and bitter consistency.
Comment: Full of fruity promises that do a 180 into an umami receptor sensation overload.
