Tasting notes
Taster   Martine Nouet
Nose: A strong sour note. Cider apples, cider cellar. Antique shop. Opening on sweeter notes. Caramel, barley sugar. A touch of burnt wood.
Palate: Dry and crisp. The oak grips the palate. Bittersweet apples, chestnut purée.
Finish: Dry but the bitterness has gone. A touch of sandalwood in the back.
Comment: An interesting profile. As the wood takes the lead but gives in to the fruit inthe end. Not for the sweet tooth.

Taster   Dave Broom
Nose: Quite an effusive nose, with a sooty/charred note coming from (double?) oak. This is more about dried plum and cranberry. Sweet and subtle.
Palate: Fat and jammy. The fruits are ripe alongside some pecan but sweetness. Water however accentuates the oak and some stalky tannin. Hard to tell what this was before the secondary casking took place.
Finish: Butter, coffee and oak.
Comment: For me the cask is over-dominant.
