Tasting notes
Taster   Chris Goodrum
Nose: Raw, intense, gritty, herbal Oloroso. Earth, manure with hints of walnuts, chicory and coffee. Water brings out a touch of prune, dried plum and orange, as well as softening the rawness.
Palate: Surprisingly soft, well, relatively so! Like the nose it is Oloroso dominated, lightly tannic and herbal with a touch of treacle and malt. Water brings out some coffee/caramel notes.
Finish: Quite herbal – mint and heather with plenty of drying, coffeed tannins.
Comment: A good, clean sherry matured malt.

Taster   Joel Harrison
Nose: There is some good oak influence from the cask on this whisky, which gives it body and broad shoulders for a nice spiritus element to stand upon.
Palate: The initial hit of spirit it tamed well with water which reveals ripe black cherry, plums, damsons, figs and quince. This is dark and brooding. Velvety.
Finish: Much more of the dark fruits, there is a really tasty element which fights a little too much with the spirit.
Comment: I’d say this would be perfect with cheese, in place of the quince jam.
