Tasting notes

Taster Phoebe Calver

Nose: Sweet peat, barbeque meat, some hints of electric cables and lapsang souchong tea, cork board and boiled meat and fennel.
Palate: There’s a whole lot of earthy peat smoke, it’s warm and there’s a rich, salty umami note. Then there’s some herbal edge, like tarragon and a metallic note. It’s hot, peppery and smooth, becoming menthol with cardamom spice.
Finish: A meaty umami note lingers, with petering smoke.
Comment: Really interesting and different. Plenty of complexity and well balanced.

Taster Christopher Coates

Nose: Coal smoke and charcoals. Dark chocolate, maraschino cherry, plum wine, and blackberry jam. Umami of mushrooms fried in soy and served with beef. Golden syrup, too.
Palate: Wafts of smoke again. The char of barbeque meats, subtle hickory, tarragon, peppermint, charred pineapples and strawberries with honey glaze. Tasty.
Finish: The fruits fade fast but the smoke lingers on with white grape.
Comment: A very indulgent barbeque that I’d like an invitation to.
