Tasting notes

Taster Becky Paskin

Nose: Fragrant orange blossom and acacia honey, harvested from a coastal hive. Lemon curd plays alongside salty dried nori downwind of smouldering coal embers.
Palate: Picking out sticky old Lemon Drops from a paper bag while tending to a dying beachside bonfire. The faint ghost of meaty smoked fish lingers.
Finish: Bonfire ashes caught in a nearby lemon tree.
Comment: Subtle, uplifting and beautiful.

Taster Rob Allanson

Nose: A mix of salt, sweetness and gentle smoke. Spicy prawns on a barbecue. Opening a wood smoker full of brisket, that fatty note.
Palate: The smoke dies back to let fruit notes through, lemon and lime cordial, melon and Parma ham with a little cinnamon. Baked cod wrapped in prosciutto.
Finish: The smoke layers come back, dying wood embers that dry slowly leaving lemon curd pastry sweetness.
Comment: A great balance of what smoky whisky can offer, that mix of citrus and wood smoke. Refreshing.
