Tasting notes

Taster Phoebe Calver

Nose: Really welcoming notes of toasted brioche, covered in barrel-aged maple syrup, with warming cinnamon and a red berry compote.
Palate: Gorgeously rich notes of that red berry compote, drizzled on top of cinnamon French toast, with a slight hint of the caramelisation of crunchy brown sugar.
Finish: Toffee and toasted oakiness, leading into a tingly cinnamon spice.
Comment: This is dreamy. It’s balanced and characterful. I also feel like this would play well in cocktails.

Taster Christopher Coates

Nose: Herbal. Thyme, tarragon, lemongrass, bisongrass and anise. Chalky and mineral, bordering on oil paints. Green apple and pear drop. Coffee liqueur and cedar. Slightly sappy.
Palate: Intense candied ginger, nabat (saffron rock sugar), and candied yuzu. Blackberry wine gums and some peppermint leaf. Toffee apple. Some spicy oak character, too.
Finish: Medium. Ends on sweet apricot jam and cooling mint.
Comment: A real rollercoaster of flavour.
