Tasting notes
Taster   Christopher Coates
Nose: Rose petals and pomegranate juice. Somewhat earthy, with liquorice, plasticine and all-spice. Slightly gluey.
Palate: Sweet but spiritous and at first really dominated by alcohol. Leaving it to take the air really transformed it. There’s caramel and allspice, cinnamon-dusted orange segments and candied ginger.
Finish: Short and hot, even after the air rest. Evaporates and leaves tannin dryness.
Comment: Hot and unruly, but the nose shows the spirit has potential to deliver more in time.

Taster   Phoebe Calver
Nose: Wensleydale cheese spread on a wheat cracker, followed by some fig jam. There’s a little dried papaya note there too, with some sweet spice and a hint of dried sage leaf.
Palate: Pretty hot with some caramel wafer, sweet spice and a bit more wheat cracker.
Finish: The finish is short after the wave of heat wears off, leaving you with that slightly dry woody note.
Comment: It’s really rather hot and a little confusing to be honest.
