Tasting notes

Taster Rob Allanson

Nose: Cedar chests, cigar boxes, high quality pencils, beeswax, pine resin, full fat milk cheese. Candied walnuts and a little white bacon fat. Fresh varnished wood and Oxford marmalade.
Palate: Plenty of herbal and mineral touches. Sage. Lots of wood and smoked vanilla, then a beefy edge. Some boozy cherries and fruit.
Finish: Long with sticky toffee and then the spices build, chilli heat prickle and white pepper throughout.
Comment: Fabulous stuff with great balance and integration.

Taster Lyndsey Gray

Nose: Notes of mahogany, liquorice, peardrops and cocoa butter. Leathery with wisps of pine sap, pink grapefruit, ink and underripe banana skin.
Palate: Hot leather, tomato ketchup and pickled strawberries. Aniseed, hoisin duck pancakes, celeriac boulangère and pear skin, followed by yoghurt covered raisins and roasted chilli flakes.
Finish: A dry spice coats the bridge of the palate with aromatic notes piercing through.
Comment: Aromatic and vibrant all at the same time. A game changer.
