Tasting notes

Taster Christopher Coates

Nose: Curry leaf and stewed beef with fennel, cranberry and plum sauce. Ground coriander seed, five-spice and a pleasant, subtle note of apple cider vinegar. Under it all, ripe pears and apples stewed with cinnamon and nutmeg.
Palate: Light. The savoury notes are here but subtler, balanced by cloudy apple juice and winter melon. Then comes banoffee pie and whipped cream, with buttery and sweet shortcrust pastry.
Finish: Medium. Brown sugar and pastry.
Comment: Immensely drinkable, but the nose offers more depth than the palate.

Taster Phoebe Calver

Nose: Sweet layers of icing covering a fruit cake, vanilla pod and hard toffee, with some cinnamon and nutmeg spice.
Palate: Things get a little fresher here, with fresh berries, more nutmeg, chopped dark fruits and sandalwood notes.
Finish: Lingering spices here, with some citrus cutting through.
Comment: Really playing with the flavour wheel here – lots of complexity and something for everyone.
