Tasting notes

Taster Christopher Coates

Nose: Lily pollen, cut slate, heather and mandarin oils. Bergamot and sandalwood. Subtle lavender and cranberry juice. Pomegranate molasses and rose petals.
Palate: Light. A heady balance of sweet caramels and floral notes. Like rose-flavoured Persian nougat. Candied almonds. Chinotto orange, sage, and raspberry leaf. Rooibos tea with honey.
Finish: Long, on the orange and rooibos notes.
Comment: Really complex and heady. A twist on the classic bourbon profile I wasn’t expecting at all.

Taster Phoebe Calver

Nose: Like a big old campfire on a beach. Sweet earthy smoke, a little saltiness and some heather honey intertwined with cedar wood.
Palate: The smoked notes continue here, with stewed dark berries, a chocolate soufflé and some cigar box notes.
Finish: Lovely and long, with the smoke and cigar box notes sticking around.
Comment: Really interesting – a lovely mix of levels with the thicker notes and the heathery hits.
