Tasting notes
Taster   Christopher Coates
Nose: A jammy nose of quince paste, fruit chutney, and pink wafer biscuits, and perfumed like a lavender and rose candle.
Palate: Light bodied and effervescent thanks to the alcohol. Strawberry ice cream with ginger, pink pig penny sweets, port and cream sauce, Victoria sponge.
Finish: The rich strawberry flavours continue well into the medium-length finish. It’s juicy, although the slightest of rubbery notes can be detected.
Comment: Layers of patisserie-like flavours, yet somehow not saccharine.

Taster   Phoebe Calver
Nose: A lot of heat comes off this immediately. Then leather polish, physalis fruit, crumbly shortbread, and peppermint cream chocolates.
Palate: Very oily. The heat holds off until the end, allowing drying ginger biscuits, a hint of nutmeg, caramel sauce, and sage, before mint choc chip ice cream.
Finish: A relatively long finish that gets buttery and that mint choc chip.
Comment: It’s definitely getting hot in here, but you get time to savour the flavour.Absolutely worth a slow sip.
