Tasting notes

Taster Bethany Whymark

Nose: Eccles cakes (flaky all-butter pastry, raisins, and crunchy demerara sugar). Bramley apples cooked with cinnamon. Clove, almond milk, and a touch of gentian.
Palate: Red fruits – raspberry, blueberries and blackcurrants – with milk chocolate. Black pepper. Powdered sugar over fresh doughnuts. A little freshly planed oak.
Finish: Medium-short, fading on spiced apple and raisin streusel.
Comment: An autumnal treat with lovely spicy warmth.

Taster Christopher Coates

Nose: A little shy nut opens with time. Cedar wood and mandarin zest. Delicate dried tobacco, raisin and perfume of rose flower. Freshly foraged blackberries and blueberries, a touch under-ripe. Ceylon tea and fig loaf. Toffee sauce.
Palate: Light-medium bodied. Blackberry jam. Dried prunes dipped in dark chocolate. Cinder toffee and tamarind caramels. Baked red apple. Brown sugar.
Finish: Medium. Fig loaf fades to baked red apple.
Comment: A rich and chewy dram with a distinctive fig loaf character.
